Why Raw Honey?
Honey has been valued for centuries not only for its flavour, but also for its natural properties. Raw, minimally processed honey contains trace amounts of pollen, enzymes, antioxidants and other naturally occurring compounds that can be reduced through heavy processing and high heat treatment.
At Orwell Honey, we keep processing to a minimum, so the honey stays as close as possible to how the bees made it. We simply extract, filter, settle and jar the honey, helping to preserve its natural flavour, texture and character.
Because our honey is raw and unprocessed, it may naturally crystallise over time. This is completely normal and is actually a good sign that the honey has not been overly heated or ultra-filtered. Crystallisation is a natural process where the glucose in honey forms tiny crystals, changing the texture from runny to set.
Some people prefer honey soft and runny, while others enjoy the thicker, smoother texture once crystallised. If you would like to return your honey to a liquid state, simply stand the jar in warm water gently.
